Tomato, Watermelon Salad with BBQ Jerk Shrimp
Serves 6-8
Broken Sherry Vinaigrette
- 2 Tablespoon Sherry vinegar
- ¼ Teaspoon Chopped Oregano
- ¼ Teaspoon Chopped Thyme
- ¼ Teaspoon Freshly Black Pepper
- ½ Tablespoon Kosher or Sea Salt
- 1 Tablespoon of Chopped Garlic
- 1/3 Olive Oil
Method:
- Place all ingredients in a bowl and mix well. Set aside or make a day ahead and place in Refrigerator
Watermelon- Tomato Salad
- 4 medium “Organic” or “Vine ripened” Tomatoes
- 6 cups diced (½ inch) diced Red Watermelon (if possible mix some Yellow Watermelon in for Great color)
- 1 small English Cucumber, peeled and cut 1/3 inch thick slices
- 1 cup sliced “Wisconsin Burrata Cheese”(Bel Gioioso brand)
Method:
- Place all ingredients in a bowl a large bowl, make sure you stir or shake your vinaigrette so it incorporates again. Drizzle over salad.
