Tomato, Watermelon Salad with BBQ Jerk Shrimp

 

Serves 6-8

Broken Sherry Vinaigrette

  • 2 Tablespoon Sherry vinegar
  • ¼ Teaspoon Chopped Oregano
  • ¼ Teaspoon Chopped Thyme
  • ¼ Teaspoon Freshly Black Pepper
  • ½ Tablespoon Kosher or Sea Salt
  • 1 Tablespoon of Chopped Garlic
  • 1/3 Olive Oil

Method:

  • Place all ingredients in a bowl and mix well. Set aside or make a day ahead and place in Refrigerator

Watermelon- Tomato Salad

  • 4 medium “Organic” or “Vine ripened” Tomatoes
  • 6 cups diced (½ inch) diced Red Watermelon (if possible mix some Yellow Watermelon in for Great color)
  • 1 small English Cucumber, peeled and cut 1/3 inch thick slices
  • 1 cup sliced “Wisconsin Burrata Cheese”(Bel Gioioso brand)

Method:

  • Place all ingredients in a bowl a large bowl, make sure you stir or shake your vinaigrette so it incorporates again. Drizzle over salad.
